I love those little chicken pies.. the very small round flattish ones.. and been trying to dissect the recipe for it. In the process like usual I decided to do my "own thing" again.. and I must say - they are not half bad ! In fact they are very nice. so here goes:
1 pkt large skinless chicken breasts
1 large onion
2 bay leaves
500 ml Nomu chicken stock
A good dollop Butter
1 tbsp flour
1 tbsp Worcester sauce
2 tots sherry
Salt & Pepper
2 pkt puff pasty
A bit of egg yolk
First fry chopped onions and then add chicken, ay leaves and stock.
Boil for about 10 minutes and let it cool down.
Shred the chicken into small pieces.
Make a roux with butter and flour and add the left-over stock. It should be quite thickish in the end.. then add the Worcester sauce and sherry, and salt & pepper to your liking.
Heat oven to 180 deg C.
Cut out about 10cm rounds of the pastry and line the muffin pans.
Fill the lined pans with the chicken mix
And close the lid with about 5 cm rounds.
Bake for 25 minutes. Let them cool down a bit before removing from the pan.
